Seize the means of fermentation! ⓺⓽ Robespierre vs gentrification

A bulletin on the life and (up)rising of my sourdough starter: Robespierre

a cursory look through dublin bakeries STOP at least those which sell bread STOP which is not - alas - a given nowadays STOP
will reveal that the prices for the most basic sourdough loaf they offer STOP
are as follows: STOP
classic all white, 100% organic - €5.5 STOP
country loaf, 100% organic - €6 STOP
100% wholemeal, sourdough loaf - €6.25 STOP
pure organic white loaf - €5.5 STOP
wheat flour sourdough - €9 STOP
as a consumer of bread STOP
i find it extremely hard to be able to support these prices STOP
because these are prices of bread-as-a-product STOP
not bread-as-sustenance STOP
i would love to support the efforts of independent bakeries STOP
but before Robespierre came into my life STOP
Lidl and Tesco were more friendly to my pockets STOP
when did we lose bread to gentrification? STOP
when did bread stop being the minimum un-disputable piece of food that the people could hope to afford? STOP
in the course of history, revolts were started due to the increase of the price of bread STOP
why are we normalizing 5/6/7 euro for a single loaf? STOP
i empathize with the producers and bakery owners to some extent STOP
i am sure they have enormous costs STOP especially for renting STOP
that are likely to drive the price of bread STOP
i do not and cannot question that STOP
but can we stop for a moment and reflect STOP
do i want to normalize six euro loaves? STOP
do i want to participate to the gentrification of the food of the people? STOP
i refuse STOP

may you see the sun - and yourself - rise, Robespierre STOP
