A bulletin on the life and (up)rising of my sourdough starter: Robespierre

the offering of flour STOP
at the grocery stores i can reach STOP during hectic lunch breaks STOP
has comprised so far STOP of an ensemble of low protein or self-rising products STOP
nothing against those STOP of course STOP
but not what i was looking for STOP
i was lucky enough STOP that when Robespierre came to life STOP
Tesco started carrying their own brand of double-0 STOP
a good surprise STOP considering that it is the only flour around me STOP
with more than 12g of protein/100g STOP
not only Robespierre finds it delicious STOP
but high contents of protein are easier to work with STOP
just yesterday however STOP
the universe wanted me to find STOP
not one STOP not two STOP but three STOP
distinct double-0 types of flour with high proteins STOP
in the same shop STOP and for decent price STOP
two of these are italian - Caputo rossa and 5 Stagioni rossa STOP
one is irish - Little Mill STOP
Robespierre is particularly excited STOP
he always wanted to go visit the Little Mill STOP down in Kilkenny STOP
a dream that i might help him realize pretty soon STOP
tonight i'll feed him with exactly that STOP
a 50% hydration loaf with irish flour STOP
feels the right thing to do to celebrate St. Patrick's STOP

may you see the sun - and yourself - rise, Robespierre STOP
