to discover the right proving time STOP
for a 600g loaf at 65% hydration STOP
tested a few hours STOP until full and plump STOP
outside the fridge STOP
and as a next passage STOP
about 9h in the fridge STOP
as i pour the loaf onto the parchment paper STOP
i can feel it already STOP flaccid STOP uninteresting STOP
despite the oven at 230C STOP despite vapour STOP
the loaf did not grow STOP
flavour is delicious STOP
and the loaf is now a memory only STOP
