at 2237h i make the last folds STOP
unlike Ireland STOP the dough is a 60% hydration STOP
16% Robespierre over a 100% flour STOP
the dough will prove overnight STOP
i'll bring it as far as i can before over proving STOP
hopefully i will be on time STOP
