A bulletin on the life and (up)rising of my sourdough starter: Robespierre
today's loaf has proven for longer STOP
and it has cooked differently STOP
somewhat invalidating my conviction that i should test STOP
only one change at the time STOP for each loaf STOP
hydro is still at 50% STOP
but proving time has been increased to 2:30h out of the fridge STOP
with folds every 30m STOP
and 15h in the fridge STOP
the oven has been raised to 230C with only the bottom setting STOP
the results have pleased me STOP
